Delicious Spicy Chicken In Chocolate Sauce Recipe

Perhaps an unusual thought the mixture of chocolate and meat but as you will soon realize if you prepare this dish it is a fantastic marriage between two great culinary ingredients!

Ingredients

  • 400g chicken breast cubed
  • 1 large onion chopped
  • 2 cloves of garlic
  • 2-3 small dried chilies, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 large red pepper, sliced
  • 200g butternut squash, peeled and cubed
  • 400g tinned chopped tomatoes
  • 200g of red kidney beans (drained weight)
  • 50g shelled peanuts
  • 50g Prestat plain chocolate, melted
  • Juice of 2 limes
  • 2 Tbsp peanut butter
  • Salt and freshly ground pepper

Instructions

  • Using a flame proof casserole over a low heat, fry the onion, garlic and chilies in the oil until the onion is soft
  • Add the pepper, squash and chicken and keep stirring until the chicken is lightly browned
  • Add the tomatoes, kidney beans and the peanuts; ensure that it is all well mixed
  • Cover the casserole and place it in a preheated oven at 150C/300F/Gas Mark 2 until the squash is tender (roughly an hour)
  • Alternatively you can allow it to simmer on the stove for 20-30 minutes
  • Now mix the melted chocolate and lime juice together then, when the casserole is cooked, stir in this chocolate mixture paste and the peanut butter
  • Season to taste
  • This is best served with brown rice
