Chocolate Cheesecake Recipe (serves 6)
Chocolate cheesecake the fantastic combination of two of the greatest desserts around and loved by all who know it.
Ingredients
- 50g melted butter
- 150g finely crushed digestive biscuit
- 50g demerara sugar
- 175g p;ain chocolate
- 227g of cream cheese
- 75g caster sugar
- 2 eggs
- 284ml double lightly whipped
- Chocolate curls (for decoration)
Instructions
- Mix the butter; demerara sugar and the biscuit crumbs then press the mixture over the base and sides of a 9 inch loose bottomed flan tin and then leave in the fridge to harden
- Mix the cheese, caster sugar and egg yolks and then melt the chocolate and mix it with egg, cheese and sugar mixture and then fold in half the cream.
- Whisk the egg white until stiff and then fold this into the mixture
- Turn into the crumb case and then place into the refrigerator to set.
- Whip the cream until stiff enough to pipe, then decorate the cheese cake with the cream and chocolate curls (to make chocolate curls by shaving thin layers of a Prestat chocolate bar with a potato peeler)
