Moulding the Chocolate into Prestat Babes

After tempering, the 32*C liquid chocolate is stored as a liquid, and is shortly used to make our range of delicious chocolates.

Once’s they’ve left the factory, chocolate bars have an 18 month shelf life.

Filled chocolates last just three weeks (unless they’re packed with alcohol, sugar and artificial preservatives).

In warm climates (above 27-30*C), store your bars in the fridge (never freeze them as you will kill their texture). Wrap them safely in a food bag (squeezing out all the air before you close it) to prevent them from becoming contaminated with the humidity and smells of the other food in the fridge. When you remove the bars, leave them in the bag until they reach room temperature. Then wrap them in a paper towel to absorb any condensation and prevent this from moistening and defiling the chocolate. They will be ready to eat when they have reached room temperature – normally within 20 min.

Only filled chocolates can be stored in a freezer (for up to six months). Package them in the same way as the bars, but plan 24 hours ahead before eating them. To defrost them, place, them, still bagged, in the fridge for 24 hours, then remove and leave at room temperature for half an hour in a hot country or two hours in a cooler country (or in the evening in a hot country). Then open the bag, wrap the chocolates in a piece of paper towel (to absorb the condensation) and leave for another 10 to 15 minutes to get them to room temperature before serving.
